• 220 g cream cheese

• ½ lemon

• ¼ cup raspberries/strawberries

Cream Cheese Spread:

Add the cream cheese, the lemon zest and the juice of half a lemon. Mix until the cream cheese is fluffy. Add salt and black pepper to taste.

Your Sandwich:

Spread about 2 tbsps of the Lemon Cream Cheese Spread on each half of the bagel. Layer on the berries and fresh mint. Enjoy!

Hummus & Rocket

Hummus Spread:

• ½ cup (250 g) cooked chickpeas, mashed

• ¼ cup (60 ml) fresh lemon juice, about 1 large lemon

• ¼ cup (60 ml) tahini

• 1 small garlic clove, minced

• 2 tbsps extra virgin olive oil, plus more for serving

• ½ tsp ground cumin

• 1 pinch cayenne pepper (optional)

salt to taste

In a bowl, combine the tahini and lemon juice. Add the olive oil, minced garlic, cumin, and half a tsp of salt. Mix together until well blended. Add half of the chickpeas and process for 1 minute.

Add the remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes. If the hummus is too thick, add 1 to 3 tbsps of water until you are happy with the consistency.

Taste for salt and adjust as needed.

Your sandwich:

Spread about 2 tbsps of the Hummus on each half of the bagel. Top it with fresh slices of tomato and rocket for extra goodness!
