Vitamin C

Vitamin C, also known as ascorbic acid, serves to ensure correct development and function of several structures in the human body. Its most important function is to help reinforce the immune system of the body. This vitamin can be obtained from several foods such as fresh fruit and vegetables. Broccoli, brussels sprouts and cauliflower are known to be high in vitamin C, and so are acid types of fruit, such as oranges, lemons, kiwis, tangerines and clementines.

Ascorbic acid is a volatile vitamin, that is easily destroyed by heat, leaching – meaning that the vitamin is drawn from the food into the cooking water – the addition of bicarbonate, or oxidation – exposure to oxygen. During the time that food is stored or cooled, the vitamin levels can drop by more than 50%. For that reason, dietary supplements can be a good alternative or addition to the vitamin C obtained from food. The bioavailability of this vitamin as used in supplements is as good as that of the vitamin found in dietary sources.
