Although many people mix up the terms "tea" and “infusion”, there is a very simple difference to set them apart. Tea, whether green, black or white, comes from one and the same plant, called Camellia sinensis. On the other hand, the term infusion refers to all drinks that result from the soaking of any plant (or parts of it) in hot water. For instance, the so-called chamomile tea is actually an infusion.

Green tea is the least processed tea variety. It is enzymatically inactive and non-oxidised. It is, however, rich in natural agents such as polyphenols and flavonoids, which have great antioxidant properties.
The benefits of green tea come from water-soluble polyphenols, known as catechins. In the case of tea, EGCG is the most abundant type of catechin.
Polyphenols, essentially metabolites of plants with antioxidant properties, are involved in the defence of body cells against oxidative stress.
