Low-Carb Cupcakes
Ingredients:
¾ cup almond flour
5 tbsps crushed walnuts
3 eggs
4 tbsps Greek yogurt
1 tsp vanilla extract
½ cup powdered sweetener (erythritol or xylitol)
1 tbsp baking powder
Preparation:
Combine the dry ingredients in a bowl: the almond flour, the crushed walnuts, and the powdered sweetener.
Add the eggs, the yogurt, and the vanilla extract, and mix well. Add the baking powder and stir until evenly mixed.
Place cupcake papers in metal molds and distribute the batter among the cups, filling them up just over halfway.
Bake the cupcakes in a preheated oven at 200°C for 25 minutes.
Almond Buttercream Frosting
Ingredients:
80 g traditional cream cheese
½ cup Almond Butter
2 tbsps coconut oil
2 tbsps powdered sweetener (erythritol or xylitol)
2 tbsps milk or vegetable drink
Preparation:
Mix everything using an electric mixer or a whisk, and use the mixture as cupcake frosting.
