Red yeast rice

Red yeast rice is made by fermenting rice with Monascus purpureus, a species of red mold with a centuries-long history of use in Asia, due to its culinary as well as medicinal values. Red yeast rice is rich in compounds such as phytosterols, isoflavones and monounsaturated fats, which all work to support healthy blood cholesterol levels.

Among the biologically active compounds found in this yeast strain, monacolin K stands out. Produced naturally by the fungus, monacolin K is chemically very similar to statins, a class of prescription medications used to lower blood cholesterol levels.
