  • Ingredients
  • 400 g firm tofu
  • 2-3 tbsps olive oil
  • Salt to taste
  • 1 large carrot, finely cut into thin matchsticks
  • 4 onions, finely sliced
  • 140 g cherry tomatoes
  • Coriander, chopped
  • Basil leaves, chopped if large
  • 85 g baby herbs or lettuce leaves
  • 1 sachet Prozis Roasted Soybeans

Unpack the tofu, wrap it with paper towels or a dish cloth, and set something heavy on top, like a plate. Leave it for about 15 to 30 minutes. Once pressed, slice the tofu into small cubes. Heat up about 2 tablespoons of olive oil in a pan on medium heat, and add the tofu. Fry for about 15 minutes, stirring every three minutes or so. Add salt to taste.

Mix the dressing ingredients in a bowl. Once the tofu is cooked, toss in the dressing along with the carrot, the onion, the tomatoes, the coriander, and the basil. Mix really well, pile it onto the salad leaves, and sprinkle with the roasted soybeans.

1 tbsp sesame oil

1 tbsp sweet chili sauce
