On Psyllium

Psyllium Husk Crackers

Ingredients:

• 1 cup boiling water

• 1 tbsp Prozis Psyllium Husk Powder

• 1/2 cup Prozis Pumpkin Seeds

• 1/2 cup sunflower seeds

• 1/2 cup Prozis Flaxseed

Seasonings: just salt, or a combination of garlic powder, onion powder, fine sea salt, and ground black pepper.

Work your magic:

1. Whisk together the pumpkin seeds, the sunflower seeds, the flaxseed, the psyllium husk powder, the salt, and/or the combination of seasonings in a medium heat-proof mixing bowl.

2. Add the boiling water and stir until combined. Stir occasionally for 1 more minute until the mixture has thickened.

3. Pour the batter onto the baking sheet lined with parchment paper. Next, use a silicone spatula, wooden spoon, or even your hands to spread the batter into a super thin layer, trying to make it as even as you can to cover the whole sheet.

4. Bake at 180ºC for 45–55 minutes until the center is no longer soft and has mostly hardened—it'll get a bit harder as it cools.

5. Place the baking sheet on a wire rack and let the crackers cool to room temperature. Then, break them into the size and shape you want and enjoy! Store any extras in a sealed container for 1–2 weeks.

Psyllium Husk Pancakes

Ingredients:

• 1 cup Prozis Almond Flour

• 2 tbsps Prozis Psyllium Husk Powder

• 2 eggs

• 1/4 cup almond milk (or any milk/plant-based drink of your choice)

• 1 tsp baking powder

• 1/2 tsp vanilla extract (optional)

• Prozis Agave Syrup to taste

Work your magic:

1. In a mixing bowl, combine the almond flour, the psyllium husk powder, the baking powder, and the agave syrup.

2. In another bowl, whisk together the eggs, the milk/plant-based drink, and the vanilla extract if you're using it.

3. Pour the wet ingredients into the dry ingredients and mix until smooth.

4. Heat a nonstick skillet or griddle over medium heat.

5. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown on the other side. Repeat with the remaining batter.

6. Serve the pancakes warm with your favorite toppings, such as fresh berries, sugar-free syrup, or whipped cream.
