Banana Bread

Ingredienser
  • 2 bananas
  • 2 eggs
  • 75 g coconut oil
  • 150 g Prozis Coconut Palm Sugar
  • 5 g vanilla extract
  • 200 g all-purpose flour (or other)
  • 6 g chopped Prozis Nuts

Tilberedelse

1. Preheat the oven to 180°C.

2. Peel the bananas and mash them in a bowl with a fork or potato masher. Set aside.

3. Lightly beat the eggs in a separate bowl.

4. Add the coconut oil, vanilla extract, mashed bananas, and coconut palm sugar to the eggs. Mix gently until smooth.

5. Slowly incorporate the flour into the wet mixture, stirring until fully combined. Next, gently fold in the chopped nuts.

6. Pour the mixture into a greased loaf pan. Smooth the top and lightly sprinkle with additional nuts or a banana slice for decoration (optional).

7. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

Tip: Serve warm with a drizzle of Prozis Peanut Butter or pair it with your morning coffee for a sweet start to your day!

Chocolate-Covered
Carrot Cake

Ingredienser

Cake

  • 3 large carrots, peeled and grated
  • 4 eggs (yolks and whites separated)
  • 300 g oat flour (or other)
  • 75 g coconut oil
  • 150 g Prozis Coconut Palm Sugar
  • 1 teaspoon baking powder

Optional Topping

  • 50 g 70% dark chocolate
  • 5 g coconut oil

Tilberedelse

Cake:

1. Preheat the oven to 170°C.

2. Grease and flour a cake pan.

3. Peel and grate the carrots, then set aside.

4. In a blender, combine the coconut oil, half of the grated carrots, coconut palm sugar, and egg yolks. Blend until smooth.

5. Pour the blended mixture into a large bowl.

6. Gradually add the flour, mixing until the batter is smooth and uniform.

7. Stir in the remaining grated carrots.

8. In a separate bowl, beat the egg whites until stiff peaks form.

9. Gently fold the beaten egg whites into the cake batter.

10. Add the baking powder and mix delicately, ensuring it’s evenly distributed.

11. Pour the batter into the prepared pan and bake for 40–45 minutes at 170°C.

Optional Topping:

1. Melt the dark chocolate with the coconut oil in a double boiler.

2. Pour the chocolate topping over the warm cake.

Tip: For an extra crunch, sprinkle some Prozis Nuts on top of the chocolate coating before it sets!
