Grilled Mushroom and Goat Cheese Sandwich

• 1 clove garlic, minced
• 1 red bell pepper, cut into 4 pieces
• 1 yellow bell pepper, cut into 4 pieces
• 1 zucchini, sliced
• mushrooms, sliced
• goat cheese
• 2 tbsp skimmed milk
• Fresh basil
• Fresh parsley
• Salt
• Pepper

Makes 4 sandwiches

Heat the grill to medium-high, and spray with olive oil.

Combine the ingredients in a large bowl, season with balsamic vinegar, salt and pepper to taste, and toss to coat the vegetables evenly. Place the vegetables on the grill. Flip the zucchini slices after 3 minutes and cook for another minute. Remove to cool. Flip the remaining vegetables after 5 minutes. Cook for 4 more minutes or until tender. Remove them from the grill and cut the peppers and the zucchini into bite-sized pieces.

Meanwhile, in a small bowl, combine the goat cheese and milk, and stir until the cheese is thinned and smooth. Spread 1/4 of the goat cheese mixture on each of the rolls and then layer on one mushroom, the rest of the vegetables, and 1/4 of the herbs.
